Spaghetti alla chitarra, the original recipe

Theguitar spaghettiare a dish of Abruzzo origin. The name derives from the so-called “carrature”, which represents the typical rectangular wooden frame that gives rise to the typical onesspaghettisquare section. To better enjoy this recipeit is advisable to use only products of safe origin, perhaps for veal and pork pulp you can contact a small trusted breeder. In some regions of Italy there are still those who live on sheep farming, agriculture and simple farming, very different from industrial plants.

Prepare the square section spaghetti by combining 400 grams of durum wheat flour and 4 organic eggs. If you use ready-made spaghetti, the ingredients for the sauce for four people include:

  • 6 cl of extra virgin olive oil
  • 100 grams of veal pulp
  • 50 grams of pork pulp
  • 50 grams of mutton
  • 5 cl of red wine
  • 400 grams of tomato sauce
  • 60 grams of grated pecorino
  • 1 dry chilli
  • salt to taste
  • 1 onion

The cooking time is 15 minutes. In a very short time you will have the opportunity to bring a rich and tasty dish to the table.

Put the oil in a fairly large saucepan and place it over medium heat. Finely chop the onion and fry it. Raise the heat and add the minced meats, browning them with the addition of red wine. The wine will have to evaporate completely during the cooking process of the meat. Only when the wine has evaporated, add the tomato sauce and cook for about 15 minutes. Add salt and chopped red pepper.

In a separate pot, cook the pasta in boiling, salted water. Drain it still al dente and finish cooking in the saucepan containing the sauce. After placing each portion in its respective dish, add some pecorino and serve.
